Passas Winery & Distillery is a small family-owned winery and distillery in the Nestos Valley, in Xanthi, Northern Greece. Our vineyards are located a short distance from the Nestos River, in a place where the distinctive microclimate, the strong temperature differences between day and night, and the influence of the Rhodope mountain range create unique conditions for viticulture. We produce limited-production wines, with an emphasis on Greek and local varieties such as Mavroudi and Vidiano, as well as our own tsipouro without anise. From the vineyard to winemaking and distillation, our goal is for our products to express as purely as possible the place from which they originate.

Our Story
Our Story

Our story begins with the family’s bond with the land and the vineyard, and it evolves in 2016 with the creation of our first organized production facility in the Nestos Valley. Since then, we have been gradually developing the winery, the vineyards, and our production, choosing to remain small-scale and to emphasize the quality and character of each wine. For us, wine does not begin in the winery but in the vineyard. We monitor each vineyard plot individually and adapt our cultivation practices to the particular conditions of each year. Today, the winery continues to evolve, combining winemaking with distillation and opening its doors to people who want to get to know up close the wines, the place, and the story behind each bottle.
Terroir

The Nestos Valley is the natural environment in which we cultivate our vineyards and craft our wines. The Nestos River, the proximity to the Rhodope mountain range, the cool evening breezes, and the significant daily temperature fluctuations affect grape ripening, helping preserve their natural acidity and freshness. The soils and the area’s distinctive microclimate give our wines their own identity. That is why we strive to intervene only as needed, allowing each variety and each vintage to express its character. A visit to the winery is also an introduction to this lesser-known winegrowing region of Northern Greece.
Winemaking Philosophy

For us, the quality of a wine begins in the vineyard. Our goal is to work with raw material that expresses its place and its vintage, and then, in the winery, to transfer it to the bottle with the greatest possible purity and balance. We do not aim to make all our wines in the same style. Each variety and each vineyard parcel is treated separately, according to its character and the conditions of each harvest. Winemaking is based on control, precision, and interventions that are truly necessary. The use of wood, the time on the lees, and the aging period are tools, not ends in themselves, intended to highlight rather than mask the raw material. We seek wines with purity, freshness, balance, and character—wines that can tell something of the Nestos Valley in every bottle.
