Our winery offers unique experiences connecting with the Thesprotian vineyard. Visitors are guided through the vineyard and the winery’s facilities, where they learn about the estate’s history, the cultivated varieties, the mindset, and the winemaking processes. The tour concludes with one of the tasting packages in a space surrounded by vines and lush greenery. Wine purchases are available on site. The venue is available for hosting events.

Our Story
Our Story
Zervas Winery, the boutique family winery that aims to showcase the terroir of Thesprotia and the potential of the rare local Asproudi variety. Around a gravity-flow winery built in 2019 on the banks of the Kalamas River (ancient Thyamis) in a Natura 2000 area, Giorgos Zervas has planted his vineyards and produces wine from the varieties Asproudi, Malagouzia, Vertzami, Mavroudi, and Syrah, revealing the grandeur of the Thesprotian land through a combination of traditional and modern winemaking techniques.
Terroir
The vineyards are directly influenced by the constant breeze of the Kalamas River, which cools them during the day, and by the cool winds coming from the Mourgána mountain range and Mount Doulka during the night, creating grapes with exceptional ripeness and a dense concentration of flavors and aromas that primarily highlight the variety’s fruit. Wanting to emphasize the potential of the Asproudi variety that we inherited from our parents, we continued with new plantings of the variety in different vineyards. The winery is located in a Natura 2000 designated area where more than thirty bird species live, so with respect for nature and our vineyards, we maintain an organized regime of fertilization and plant protection, as well as organic weed control.
Winemaking Philosophy
We use modern winemaking techniques in a facility that operates fully harnessing the power of gravity, minimizing the use of pumps, while respecting the purity of the grape and the quality it offers us. Our wines come only from the finest grape juice, and many winemaking stages are done by hand. Each wine in our collection is a boutique vinification crafted with strict attention and care. Bottling is done by hand, one by one, in every bottle.
